Caprese Toast Bites


  • 1 (1 pound) loaf sourdough bread, thickly sliced
  • 1 tablespoon unsalted butter
  • 2 cloves garlic, minced
  • 1 (14 ounce) can petite diced tomatoes, drained
  • 1/4 cup fresh basil, chopped
  • 1 ( 3 ounce) package cream cheese, softened to room temperature
  • 1/4 cup grated Parmesan cheese
  • 1( 8 ounce) package shredded Mozzarella cheese


  1. Preheat oven to 350 degrees. Melt butter in a skillet over medium-high heat; add garlic and cook, stirring constantly, until fragrant, about 1 minute. Mix in tomatoes and fresh basil; reduce heat to medium and allow to simmer for 5 minutes. Meanwhile, toast bread slices on a baking sheet for about 5 minutes or until lightly toasted. In a small mixing bowl, combine the cream cheese with Parmesan cheese. Spread warm bread slices with softened cream cheese mixture, and then spoon warm tomato mixture over the cream cheese. Sprinkle evenly with shredded Mozzarella. Return bread to oven and bake until cheese is melted, about 5 minutes longer.
