Cheesy Lasagna Roll Ups


  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons parsley (minced)
  • 2 tablespoons basil (minced)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1-pound lean hamburger meat
  • 2 teaspoons seasoned salt
  • 1/2 cup onion (diced)
  • 1/2 cup green bell pepper (diced)
  • 2 tablespoons garlic (minced)
  • 1/2 cup mushrooms (diced)
  • 1 28-ounce can diced tomatoes
  • 1 6-ounce can tomato paste
  • 3 tablespoons granulated sugar
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 12-ounce box lasagna noodles
  • 2 cups shredded Mozzarella cheese
  • 1 cup shredded Parmesan cheese


  1. Preheat oven to 375 degrees. Spray a 9x13-inch baking dish with cooking spray. Boil lasagna noodles, drain and set aside by laying the noodles flat on sheets of parchment paper or foil until ready to use. Cover the rolled noodles with the meat filling and top with the Mozzarella cheese and the Parmesan cheese. Bake for 20-25 minutes.
  2. In a large saucepan, combine the hamburger meat with the seasoned salt and cook with the onions, green bell pepper, garlic, and mushrooms. Cook until meat is fully cooked and drain. Add the diced tomatoes, tomato paste, sugar, black pepper, and garlic powder to the hamburger mixture and simmer for 20 minutes.
  3. While the meat is simmering, create the cheese filling by combining the ricotta cheese, the Parmesan cheese, egg, parsley, basil, salt, black pepper, and garlic powder.
  4. Set aside. Spread 1 cup of the meat filling into the sprayed baking dish. Onto each cooked lasagna noodle divide the cheese filling equally (approximately 2-3 tablespoons per noodle). Spread each noodle with the cheese filling and roll up putting them seam side down onto the hamburger meat filled baking dish.
  5. Cover the rolled noodles with the meat filling and top with the Mozzarella cheese and parmesan cheese. Bake for 20 - 25 minutes. Tip: For a different type of serving place the rolled noodles to stand on end in the hamburger meat filled baking dish.
