Spinach Salad with Creamy Buttermilk Dressing

Ingredients

  • 1 (6 oz) bag fresh baby spinach (about 7 cups)
  • 1 cup thinly sliced red onion
  • 1 (8 oz) package sliced fresh mushrooms
  • 1/2 pound bacon, cooked crisp, and drained
  • 2 cups shredded cheddar cheese
  • 1 cup pecans, toasted and coarsely chopped
  • 3 eggs, hard boiled, sliced or chopped
  • Dressing Ingredients
  • 1/2 cup buttermilk
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons freshly snipped chives
  • 2 tablespoons low-fat mayonnaise
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. In a large bowl, or on a serving platter, arrange salad ingredients in the order listed. Toss lightly, if desired. For dressing, whisk all ingredients together in a small bowl. Cover and chill until ready to serve. Drizzle over spinach salad just prior to serving. Enjoy!
